Modern Bakers, the company that invented the world’s first healthy bread, has received £450,000 in public funds to do the same with confectionery.
“Bread was just the beginning. Receiving our sixth grant from Innovate UK (the UK’s National Innovation Agency) is very exciting,” said Melissa Sharp, co-founder of the company.
The Briton added that she and her colleague Leo Campbell hope to help create “a new era of mass production of food that is nutritious and has a positive impact on the well-being of people and the planet.”
Their bread, which is sold in Marks & Spencer stores, is lower in calories and carbohydrates and full of nutrients and fiber. In addition, the company hopes to introduce other products with an ultra-high degree of processing, such as breakfast cereals, pasta, ready-to-eat meals, and yogurt. It is expected to help alleviate the obesity epidemic in the UK.
